My office had a Halloween event today and I was tasked with making some fun desserts! I love to bake, and often run into the issue where I’ve made more things than Ian and I can eat (or want to eat), so this was the perfect opportunity for me to have some fun.
I made candy corn cupcakes, pumpkin chocolate chip cookies, and death by chocolate fudge brownies. My Sunday was somewhat of a juggling act piecing each of these desserts together, but I had a blast. Below are links to each recipe and some key takeaways to be aware of if you decide to make them.
Candy Corn Cupcakes
I got this recipe from The Curvy Carrot.
Pros: super easy to whip up, frosting is delicious, they look adorable
Cons: cupcakes have a little too strong of an almond extract taste for me, frosting was a little scarce for how many layers were needed. In the future, I would reduce the almond extract and make more frosting.
Pumpkin Chocolate Chip Cookies
I got this recipe from Chelsea’s Messy Apron.
Pros: easy to customize spices and flavors
Cons: could not get them to look like Chelsea did on her blog but they were still delicious, I just rolled them into regular balls when I saw that they weren’t falling into place the way she described preparing them
Death by Chocolate Fudge Brownies
I got this recipe from Sugar Dish Me.
Pros: so easy to customize with fun toppings on the ganache (I added sprinkles and M&Ms in addition to the Oreos)
Cons: these brownies are super fudgy, which could be a con to some, but that’s just how I like them 🙂
